Cabbage With A Dash of Bollywood

So this begins my first "cooking lesson" with Dad. More of a demo, really. And it is simple and easy to grasp. So if you're a hopeless kitchen mess like I am (at this nooby stage), no worries!

Serving for: 1-2 persons

The Ingredients:

1 x Green cut chilli

1 x Small Red cut chilli

2-3 x Small onions - to be bruised
(just smack it down with the blade of your cutting knife - "Wham!")

The Condiments:

* Tumeric powder (that orangey thing)

*Some indian spice seeds (name pronounced as "alpha-sir-sawee") - used to cook curry fish head as well as some other indian vegetable dishes.

The basil is just there for.....decoration.

# # # # #

Steps-A:

1. Saute the chills and bruised onions.... just for a while.

2. Throw in the cabbage.... Mix them

3. Add in: 2 teaspoons of Tumeric powder

4. Add in: 1 tablespoon of the "Alpha-sir-sawee" spice

5. Fry some... and then cover to heat-soften the cabbage...probably for a minute (taste to try)

Mixing everything together

Steps-B:

6. Add in: A pince of salt (yes, you pinch with your fingers and sprinkle into the contents)

7. Add in: A pinch of sugar (don't ask me why, but it does add to the flavor)

8. Mix the contents further by frying some...

This is when you taste to try again. If more taste is needed, add a sprinkle of fish sauce (instead of salt - too much salt is harmful to your blood pressure)

Final Touch:
Cover to heat-soften the cabbage...till you're happy with the softness :)
